Sun-dried Tomato Pesto

Ingredients
- 2 garlic cloves
- ½ cup grated Parmesan cheese
- ½ cup pine nuts
- ½ cup olive oil
- 1 cup sun-dried tomatoes packed in oil, or rehydrated with hot water
- Salt and freshly ground pepper, to taste
Instructions
- In a food processor, add all ingredients and mix until blended.
