- 2½ pounds ground lamb
- ½ pound ground pork fat
- 2 teaspoons cumin
- 2 teaspoons oregano
- 1 teaspoon black pepper
- 2 teaspoons salt, more as needed
- ½ teaspoon cayenne
- 4 tablespoons smoked paprika
- 1 tablespoon minced garlic
Instructions
- Mix all ingredients in a bowl until combined.
- Fry a small piece and taste.
- Adjust salt as needed.
