A larger booth presence, new product innovation and expanded range of solutions are all in the cards for General Mills Foodservice at this year’s premier pizza event in Las Vegas.

MINNEAPOLIS (March 3, 2024) — General Mills Foodservice is upping its game at this year’s International Pizza Expo to reflect its expanded portfolio of solutions and in-depth technical expertise to help pizza makers serve their best pizza. Passionate Pizzaiolo Vito Iacopelli hails from the Italian city where they make mozzarella, so it’s even more impressive that he specs REAL California mozzarella for his pizza restaurant in Los Angeles.  His innovative appetizer, the “Mo-Pizza” is a pie made entirely from quality California cheese, olive oil, spices and toppings such as roasted vegetables and prosciutto. He cuts the fresh mozzarella into little parts and adds boiling water, melting it slightly so that he can first pull it to make it smooth and then press it into a puck, which he then forms into a pizza shape. The Mo-Pizza is served cold, so once the pizza shape is formed, Chef Vito dips the cheese in cold water to stop the cooking before he adds the toppings.

(Green Bay, WI) – Chicago-based Caputo® Cheese earned top honors at the biennial U.S. Championship Cheese Contest®. The most recent awards continue the company’s heritage of award-winning fresh mozzarella cheeses.

Caputo’s Fresh Mozzarella Mini Nodini earned 1st Place in the category.  The company’s Burratini placed second within the Burrata category and Caputo’s Burrata was among the top finishers within the category overall.  “The recognition as either Best of Class or as one of the top finishers in this year’s competition is a great honor,” says Natale Caputo, a second-generation leader of the cheese company.

“Our commitment to quality cheeses is apparent in awards we’ve earned since entering U.S. and world cheese competitions over the past five years,” say Natale Caputo, a second-generation leader of the cheese company.

Since 2018, Caputo Cheese has earned 17 awards in various national and international competitions.

“Our most recent wins at the U.S. Championship Cheese Contest proves that our commitment grows stronger each year,” says Natale. “I want to thank everyone in our industry for their commitment and to the Wisconsin Cheese Makers Association in particular.  We look forward to more award-winning entries by our company in 2024.”

    Get Creative with Grilled Turkey this Thanksgiving

    Backyard grill offers a variety of ways to cook your meal’s centerpiece

    CRITTENDEN, KY — How many ways can you cook a turkey?

    The traditional headliner for the Thanksgiving fest is typically tossed in the oven, basted every now and then, and finally pulled out to serve. It’s a fairly standard practice, but you have other options. Choosing to use your backyard grill to cook the quintessential bird adds new flavours to poultry — and frees up space in your kitchen for other dishes.

    It also allows you to add some creativity to shake up that traditional Thanksgiving dinner, with a variety of ways to cook the turkey.

    Andrea Alden, food stylist and writer with Napoleon, suggests trying one of these methods for this fall’s feast.

    • Roasted — If you are nervous about trying to cook your turkey on the grill, start here. This is essentially using your grill like your oven — no need for any fancy techniques or out-of-the-ordinary prep. Place a drip pan under the cooking grids and use indirect heat (turn on the burners where the drip pan isn’t) to preheat the grill to about 325°F. Place the seasoned and stuffed bird over the drip pan and cook, checking every 20 minutes or so to baste with melted butter. It should cook for about 20 minutes per pound, or until the thigh measures about 165°F. Then remove from heat, and let it rest under some foil for about 20 minutes before starting to carve it.
    • Rotisserie — Putting the turkey on a spit and slow roasting it makes for a beautifully juicy and evenly cooked bird with skin that is crisp and meat that is tender. For a homemade “butterball” turkey, Andrea suggests injecting the meat with a butter-honey mixture before cooking. Using a drip pan under the bird also gives you a great base for a wonderful gravy.     • Spatchcocked — A bit of an advanced technique, but spatchcocking your turkey will greatly cut down on the time it needs to cook, resulting in meat that is juicy and tender with perfectly seasoned skin that is crispy and delicious. To spatchcock your bird, you cut out the spine before cooking, and flatten, before placing it on your grill.     • Charcoal — Experiment with new flavours with a turkey cooked over charcoal. Cooking over charcoal gives you the opportunity to add a smokey flavour to the meal by adding wood chunks to the coals — try a sweet wood like apple, maple or cherry. Check here for a full recipe.

    The barbecue is also a great spot to cook some of the sides and fixings that go with the turkey dinner. Experiment with plank-smoked mashed potatoes, grilled vegetables or get innovative with a grilled Caesar salad. For dessert, plank smoked apple crisp is very seasonal, or try a barbecued dessert pizza or homemade donuts.

    Consumers are craving comfort food like never before, but they also want it to be healthy, good for the planet and tasty too.

    Valio USA, known for its Finlandia brand of cheeses and butter is answering the call with the U.S. launch to the foodservice market of Oddlygood Mozzarella, a meltable plant-based cheese that provides a delicious and gooey addition to pizza, arguably America’s favorite comfort food.

    Created by chefs with pizza makers in mind, efforts are underway to partner with distributors across the country. Valio is featuring Oddlygood at the just-launched Pizza Expo 365 and has had strong initial response from operators. The company will also showcase Oddlygood at key industry trade shows this year whether in person or virtually including  ExpoWest, IDDBA and Pizza Expo International.

    “Eating habits are clearly changing. With our long heritage as cheesemakers, we saw an opportunity to bring our expertise to the fast-growing plant-based category,” says Mari Meriluoto, director of marketing and business development for Valio USA, formerly known as Finlandia Cheese, Inc.  Valio USA is a division of Valio, based in Helsinki, Finland.

    “Oddlygood is as easy to work with as any other cheese and delivers on great taste, which has been lacking in vegan mozzarellas,” Mariluoto says. “It also maintains its creaminess when cold.” In the Nordic region Oddlygood Mozzarella tops vegan pies in some 300 Kotipizza restaurants and at other eateries. Kotipizza is the largest pizza chain in the Nordic countries.

    Oddlygood Mozzarella is sold shredded in 2.2-lb. bags and in 6.6-lb. logs.  It works as a vegan alternative for any recipe that calls for creamy, melty cheese such as quesadillas, paninis, flatbreads and Italian entrées. It is made with shea and coconut oils and potato starch protein.

    Valio USA has created a suite of resources for distributors and operators, including training videos, recipe ideas and an ambassador program that will showcase chefs.

    Mario DeMita Jr., owner of Mario’s pizza in Niagara Falls, N.Y., tested Oddlygood Mozzarella by doing side-by-side comparisons with several other plant-based options and made it part of his menu.  “Meltability, texture, and taste are all superior. We had nothing but positive feedback from our customers. I used to cringe when someone would order a vegan pizza, but now I am truly proud to serve them” he says.

    Valio USA is also launching Oddlygood plant-based Cheddar Cheese to the U.S. foodservice market, in shreds and slices – just the right products for comfort foods like vegan mac & cheese and plant-based cheeseburgers. There are no plans yet to sell consumer packs of either cheese in the U.S.

    ATLANTA, GA – The Association for Dressings and Sauces awarded both 2019 Dressing of the Year and Sauce of the Year to one member, GFF, Inc., based in City of Industry, California.

    GFF’s Mango Gochujang Sauté Sauce and Mint Lime with Tequila Dressing were the winning entries, with the awards presented at the ADS Annual Meeting “Playing an Instrumental Role” held October 5-7 at the JW Marriott Austin in Austin, Texas. This marks the first time GFF, Inc. has won both Dressing of the Year and Sauce of the Year, and the second time they won Dressing of the Year – in a competition that included all the leading foodservice dressing and sauce companies.

    “Our Korean-style Mango Gochujang Sauté Sauce gets its unique flavor from the combination of various red peppers with roasted and fermented soybean. The savory sauce is balanced with sweet mango and cilantro highlighted with specks of black sesame,” said Mary dela Peña, VP of Research, Development & Quality at GFF, Inc.

    The company’s Mint Lime with Tequila Dressing is made with a delicate blend of spearmint, aromatic lime & citrus undertones, complemented with chipotle pepper and just the right spike of Tequila with a sweet hint. The dressing also can be used as a sauce to add flavoring without the excessive calories, sugar or sodium.

Nominations for the awards were received from ADS members and were then voted on by members via blind taste tests at the ADS Technical Meeting in Louisville, KY, held April 28-April 30, 2019. ADS members voted for the dressing and sauce deemed to have the best overall taste.

    Pinsa is the result of over 100 years of Roman artisan baking experience, creativity, and expertise. 

    Pinsa comes from the Latin “pinsere’ or “push the dough by hands“. It is light like a cloud of a pizza with the old world taste of freshly baked pizza in the original oval form. This unique pizza dough called PINSA, is distinctive and unique in both toppings and crust.

    Pinsa traces back to the Roman Empire. It was considered so good that the ancient priests used to offer it to the gods. Even the poet Virgil in his Aeneid reports that peasants in the Roman countryside used to knead grains, salt, and herbs to make a “low and oval cake” cooked on hot coals. That cake was easily digested, and, as told by Virgil, it was one of the first foods that the Trojan Hero Aeneas bit into when he set foot on the Lazio coast.

    Today, we want to share this delightful regional product, par excellence, characterized by a soft inside, enclosed in a crispy crust that combines the wisdom of the past with the modern need for quality food.
